Spiced apple cake with salted caramel drizzle
1 1⁄4 c brown sugar
2 eggs
1⁄2 c oil
1 teaspoon vanilla
3 apples, peeled, cored and sliced thinly
1 3⁄4 c flour
1 teaspoon baking soda
1 1⁄2 teaspoon cinnamon
1 teaspoon ground nutmeg
1⁄2 c raisins
3⁄4 c of Myanbah Farm salted caramel Sauce
Preheat the oven to 170 degrees and line an 18cm tin with baking paper.
In a stand mixer whisk the sugar and eggs until thick. Add the oil and vanilla and whisk until
combined. Remove the bowl from the mixer and fold in the apples and raisins. Sift the flour,
baking soda, cinnamon and nutmeg together and fold into the wet ingredients.
Pour into the tin and bake for 40-45mins.
Remove from the tin and cool.
Poke small holes all over the cake with a skewer and pour over the salted caramel and
enjoy.
