Tofu Larb

Olive oil

2 tablespoons of grated ginger

1 red onion diced

1/3 c chilli jam

1/4 c fish sauce

500g hard tofu, crumbled

1/3 c lime juice

12 cos lettuce leaves

¾ c chopped roasted peanuts

 

½ c coriander

In a large frying pan over medium heat add oil, ginger and onion cook until transparent. Add

crumbled tofu, cook for 5 minutes. Stir in chilli jam, fish sauce and cook for a further 3

minutes. Mix through the lime juice and serve in the lettuce cups topped with chopped

peanuts, coriander and extra chilli jam.

*Cooks Note- you can swap the tofu for chicken mince, cook a little longer.
